There isn't a way to run Mario Odyssey at 120FPS and have it running at 100%, it would have to be running at 200%. On Yuzu Configuration window there is a "Limit Speed Percent Option". depending the native speed the game can run. Most Nintendo games don't have dynamic fps it is either locked to 30 or 60 depending on the game. The game either speeds up or slows down when fps goes above or below that limit.
